Today i'm gonna show you how to make Arrabiata Soba !
An introduction to Soba.

Soba /ˈsoʊbə/ (そば or 蕎麦?) is the Japanese name for buckwheat. It usually refers to thin noodles made from buckwheat flour, or a combination of buckwheat and wheat flours (Nagano soba). They contrast to thick wheat noodles, called udon. In Japan, the word can refer to any thin noodle. Soba noodles are served either chilled with a dipping sauce, or in hot broth as a noodle soup.

In Japan, soba noodles are served in a variety of settings: they are a popular inexpensive fast food at railway stations throughout Japan, but are also served by expensive specialty restaurants. Markets sell dried noodles and men-tsuyu, or instant noodle broth, to make home preparation easy. There are a wide variety of dishes, both hot for winter and cold for summer, using these noodles.

Soba is a good nutritional addition to a diet reliant on white rice and wheat flour. Thiamine, missing from white rice, is present in soba; eating thiamine (vitamin B1) can help prevent the disease beriberi. Soba contains all eight essential amino acids, including lysine, which is lacking wheat flour. The tradition of eating soba arose in the Edo period.

Like many Japanese noodles, soba noodles are often served drained and chilled in the summer, and hot in the winter with a soy-based dashi broth. Extra toppings can be added to both hot and cold soba. Toppings are chosen to reflect the seasons and to balance with other ingredients. Most toppings are added without much cooking, although some are deep-fried. Most of these dishes may also be prepared with udon



The Ingredients

Serving for 1 person 

日本蕎麦  1束
Japanese soba


トマト   2個
Tomato   -   2 pieces



★ A olive oil

2 tsp.
★ A garlic (chopped)

1 spot
★ A round of chili peppers

A bit
★ B anchovy sauce

2 ~ 3 drops
★ B salt

1 teaspoon 1 teaspoon
★ B noodles (concentrated)

1 teaspoon 1 ~ 2 ~
Lettuce (shredded)

As appropriate



STEP 1 
トマトを湯むきしてザク切りにします。


STEP 2 
フライパンに★Aを入れて弱火にかけます。


STEP 3 
ブツブツいってきたらトマト&★Bを入れて煮詰めていきます。


STEP 4 
蕎麦を茹でて流水でぬめりを取り、3のフライパンで和える用に混ぜ合わせたら出来上がり! お好みでレタスを敷いて。




おいしくなるコツ
これは冷静もいけます。その時にはトマトソースを冷蔵庫で冷やして、
冷たい麺と和えてね。
( cool down the tomato sauce in the fridge and mix it with the cold noodles. )
